The Galician oyster, also known as the rough oyster (Magallana gigas), is the native species of the Galician coast. It is a bivalve mollusk with a rough, rounded, and flat shell, with irregular and rough valves.
Its exterior color varies between brown and greenish tones, while its interior is smooth and has a characteristic pearly white color.
It feeds exclusively on plankton from Galician waters , infinitely rich in nutrients, which gives it its unmistakable taste of the sea .
